Ingredients:
4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 lemon, juiced and zested
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper to taste
For Roasted Vegetables:
2 cups broccoli florets
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 zucchini, sliced
1 tablespoon olive oil
1 teaspoon dried rosemary
Salt and pepper to taste
Instructions:
Preheat your grill to medium-high heat.
In a small bowl, mix together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper to create the marinade.
Place the chicken breasts in a shallow dish and pour half of the marinade over them. Ensure the chicken is evenly coated, then let it marinate for at least 30 minutes.
While the chicken is marinating, preheat your oven to 400°F (200°C).
